Baingan Bharta is a popular Indian dish made from roasted eggplants (aubergines). Here's a simple recipe to make it at home:
**Ingredients:**
1. 2 medium-sized eggplants (baingan)
2. 2 tablespoons Sps Naturals Wooden Kolhu Cold Press Black Mustard Oil
3. 1 large onion, finely chopped
4. 2-3 green chilies, finely chopped (adjust to your spice preference)
5. 1 tablespoon ginger-garlic paste
6. 2 tomatoes, finely chopped

9. 1 teaspoon coriander powder

**Instructions:**
1. **Roast the Eggplants:**
- Wash the eggplants and pat them dry.
- Apply a few drops of Sps Naturals Wooden Kolhu Cold Press Black Mustard Oil oil on the eggplants to prevent them from burning during roasting.
- Roast the eggplants directly over an open flame (gas burner) or under the broiler in your oven.
- Turn them occasionally until the skin is charred and the eggplants become soft on the inside. This will take about 15-20 minutes.
- Once done, remove them from the flame and let them cool. Then peel off the charred skin and mash the pulp. Set it aside.
2. **Prepare the Bharta:**

- Add the mashed eggplant pulp to the pan and mix everything well. Cook for 5-7 minutes, stirring occasionally.
