How to make desi style Baigan bharta

Baingan Bharta is a popular Indian dish made from roasted eggplants (aubergines). Here's a simple recipe to make it at home:

**Ingredients:**

1. 2 medium-sized eggplants (baingan)
2. 2 tablespoons Sps Naturals Wooden Kolhu Cold Press Black Mustard Oil 
3. 1 large onion, finely chopped
4. 2-3 green chilies, finely chopped (adjust to your spice preference)
5. 1 tablespoon ginger-garlic paste
6. 2 tomatoes, finely chopped
7. 1/2 teaspoon turmeric powder
8. 1 teaspoon red chili powder (adjust to your spice preference)
9. 1 teaspoon coriander powder
10. Salt to taste
11. Chopped fresh cilantro leaves for garnish
12. Optional: 1/2 teaspoon garam masala for added flavor
13. Optional: Fresh lemon juice for a tangy kick

**Instructions:**

1. **Roast the Eggplants:**
   - Wash the eggplants and pat them dry.
   - Apply a few drops of Sps Naturals Wooden Kolhu Cold Press Black Mustard Oil oil on the eggplants to prevent them from burning during roasting.
   - Roast the eggplants directly over an open flame (gas burner) or under the broiler in your oven.
   - Turn them occasionally until the skin is charred and the eggplants become soft on the inside. This will take about 15-20 minutes.
   - Once done, remove them from the flame and let them cool. Then peel off the charred skin and mash the pulp. Set it aside.

2. **Prepare the Bharta:**
   - Heat Sps Naturals oil in a pan or kadai over medium heat.
   - Add chopped onions and green chilies. Sauté until the onions turn golden brown.

3. **Add Ginger-Garlic Paste:**
   - Stir in the ginger-garlic paste and sauté for another minute until the raw aroma disappears.

4. **Add Tomatoes and Spices:**
   - Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.

5. **Add Spices:**
   - Add turmeric powder, red chili powder, coriander powder, and salt. You can adjust the spice level according to your taste.

6. **Combine with Eggplant:**
   - Add the mashed eggplant pulp to the pan and mix everything well. Cook for 5-7 minutes, stirring occasionally.

7. **Optional: Add Garam Masala:**
   - If desired, sprinkle garam masala for extra flavor.

8. **Garnish and Serve:**
   - Garnish with fresh cilantro leaves and a drizzle of fresh lemon juice for a tangy kick.

Serve Baingan Bharta hot with roti, naan, or rice. Enjoy your homemade bharta!
